Tips for Making the Best Pumpkin Spice Flavored Coffee

This is the perfect recipe for pumpkin spice lovers. It’s cozy, simple, and way better than grabbing a sugary Starbucks' PSL. It's a total autumn staple you’ll want to make again and again.
Go for a creamy base
  • The milk you use makes a big difference. Whole milk or raw milk gives that smooth, velvety texture, but if you’re into non-dairy options, almond milk or a barista-style alternative works great too. Either way, it pairs perfectly with the pumpkin spice flavors.
Get your milk frothy
  • Heat your milk gently. Don’t let it boil. And use a milk frother to get that creamy, foamy texture. It’s such an easy way to make your coffee drink feel like something you’d grab from your favorite local coffee shop. Minus the hefty price tag.
Mix the egg yolk right
  • Make sure you mix the egg yolk really well with the pumpkin spice blend and collagen powder. It gives the drink a smooth base and brings out that bold pungent pumpkin flavor without any weird lumps.
Brew fresh espresso
  • Fresh espresso is a game changer. It gives the drink that bold, strong coffee flavor and balances the sweet pumpkin flavor and all those aromatic spices. No espresso machine? No problem. A french press or a strong brew from your coffee maker works too.
Find your pumpkin spice balance
  • Start with one tablespoon of homemade pumpkin spice syrup, then taste and adjust if you want more. It’s all about hitting the perfect touch of pumpkin spice to make those flavors of fall shine.
Enjoy while hot
  • Drink it fresh, while the froth is still creamy and warm. That’s when the pumpkin spice flavors really pop and the drink feels like the ultimate fall treat.

Storage

If you're making a big batch of your favorite homemade pumpkin spice latte, you’ll want to know how to store it properly so you can enjoy it later without losing that fresh, cozy flavor. Here’s how to handle refrigeration, freezing, and reheating to keep everything tasting great.

Refrigeration

  • Storing your coffee mixture in the fridge is perfect for short-term use. Just keep the pumpkin sauce (with the real pumpkin puree) separate, and add the milk and espresso when you're ready for a fresh cup. Transfer the mixture to an airtight container, like a mason jar, to lock in the spices and keep it from picking up any odd smells. It’ll stay fresh for 2–3 days. When you’re ready to use it, stir it well to mix the pumpkin pie spice and collagen powder, then add freshly steamed milk (I love oat milk) and a shot of medium roast or dark roast espresso for the best flavor.

Freezing

  • Freezing is a great way to prepare batches of your coffee base in advance and keep it fresh longer. Pour the pumpkin sauce mixture (without milk or espresso) into an ice cube tray to create individual portions.
  • Once frozen, transfer the cubes into a freezer-safe container or resealable bag. This method also works for leftover pumpkin butter or pumpkin spice creamer. The frozen base will last for up to 1 month, but make sure to label it with the date so you can keep track.
  • A quick tip: don’t freeze espresso or milk, as they don’t reheat well. When ready to use, just add freshly brewed coffee or espresso and warm milk for the best flavor.

Reheating and thawing

  • Reheating and thawing your coffee base correctly ensures it keeps all the rich flavors intact. Place frozen cubes in the fridge overnight or at room temperature until fully thawed. For a quicker prep, heat the mixture directly in a saucepan. Once thawed, warm it gently over low heat to avoid burning the sweet cinnamon and pumpkin pie spice flavors. Then, add freshly steamed milk and a shot of arabica beans espresso for a drink that tastes just as fresh as the first cup.
