Baked Whole Speckled Trout {Easy Oven Recipe}

Baked speckled trout recipe: Discover an easy oven method to cook whole speckled trout, made with simple ingredients and best flavor perfect for any dinner table.

Ingredients

  • 2 whole rainbow trout fillets speckled trout or any other trout works fine too
  • 4 tbs unsalted butter
  • 2 tsp lemon juice
  • 2 tsp capers
  • pinch paprika
  • 1/2 cup white wine
  • fresh parsley for garnish

Instructions

  • Preheat oven to 400F (200C). 
  • Prepare two pieces of aluminum foil. Place the whole trout in the middle of each piece, leaving enough foil on either side so that you will be able to fold it closed. 
  • Top trout with unsalted butter, capers, lemon juice & paprika. You can also place some of the butter on the inside of the fish. Pour 1/4 of white wine over each trout. 
  • Seal the aluminum foil shut & place the baking dish in preheated oven. 
  • Bake for about 20 mins. For crispy golden brown outside, open the aluminum foil up & set oven to broil for the last 10 mins, being careful not to burn the skin. 
  • Serve sprinkled with parsley and sauté onion.

Tips

1. Broil at Medium temperature:
If you want the baked fish to be golden brown, make sure to broil it for 10 minutes on a medium flame so it does not get burnt.
2.  Do not overstuff: 
You can add seasonings to enhance the flavor, but do not overstuff the baked fish with Cajun seasoning, as this will ruin the natural flavor and texture. 

Storage

What is the best way to store the baked whole trout fish? 
1. Cool it at room temperature, and pat dry it to prevent moisture; paper towels can absorb excessive humidity.
2. Put the fish in an airtight container.
3. Make sure to wrap it properly in a plastic wrap for storage.
4. Using the proper techniques, you can refrigerate it for 2-3 days.
