- Preheat oven to 400F (200C).
- Prepare two pieces of aluminum foil. Place the whole trout in the middle of each piece, leaving enough foil on either side so that you will be able to fold it closed.
- Top trout with unsalted butter, capers, lemon juice & paprika. You can also place some of the butter on the inside of the fish. Pour 1/4 of white wine over each trout.
- Seal the aluminum foil shut & place the baking dish in preheated oven.
- Bake for about 20 mins. For crispy golden brown outside, open the aluminum foil up & set oven to broil for the last 10 mins, being careful not to burn the skin.
- Serve sprinkled with parsley and sauté onion.
