Roasted tomato soup with fresh tomatoes recipe is a delicious way to enjoy your summer harvest. Kids love it, especially with fun-shaped pasta!

What You’ll Need

2 to 2.5 lbs (approximately 1 to 1.2 kg) tomatoes

1 large red onion

4 garlic cloves

About 4 cups of bone broth (you can adjust this based on how thick or thin you want the soup to be.)

Step 1

Preheat your oven to 400 F (200C). Line a cookie sheet with parchment paper.

Step 2

Spread your tomatoes onto the parchment paper evenly.

Step 3

Sprinkle with oregano or Italian seasoning and drizzle with olive oil. You can also add garlic cloves if you wish.
