Notes

Tips for Eating Tartare

  1. Source high-quality, fresh ingredients: Always use fresh, high-quality meat and egg yolks from a reputable butcher or any other trusted source to ensure safety and taste.
  2. Keep it cold: Chill the meat before serving to minimize the risk of harmful bacteria and eat immediately for the freshest flavor.
  3. Balance the seasoning: Use a mix of ingredients like garlic, capers, Worcestershire sauce, paprika, and mustard for the best flavor.
  4. Pair tartare with the right bread: Serve with garlic toast points or fresh sourdough for a perfect complement. You'll love it!
  5. Keep hygiene top of mind: Use proper food safety practices when handling raw ingredients, and make sure to use a sharp knife to finely chop the meat. You definitely don’t want to risk dealing with E. coli.
  6. Eat in moderation: Since tartare is made with raw ingredients, it’s best to enjoy it on rare occasions. This is especially important for people with weakened immune systems, such as pregnant women.
  7. Trust your source: Always choose a reputable supplier to minimize the risk of foodborne illness.

Storage

Homemade tartare needs to be enjoyed fresh, but if you need to store it, here are the conventional storage methods:
  • Freezing: Freezing works if you need to store tartare longer, but it’s not the best option. Freezing can change the texture of the meat, making it less ideal for raw preparations like tartare. If you freeze it, wrap it tightly in plastic wrap or place it in a freezer-safe container. You can freeze tartare for up to a month, but remember that freezing raw meat can increase the risk of bacteria. For the freshest taste and safety, it’s always best to eat tartare right away.
