Baked Whole Speckled Trout

What You'll Need

– 2 whole rainbow trout fillets – 4tbs unsalted butter – 2 tsp lemon juice – 2 tsp capers – pinch paprika – 1/2 cup white wine – fresh parsley for garnish

Step 1

Prepare two pieces of aluminum foil. Place the whole trout in the middle of each piece, leaving enough foil on either side so that you will be able to fold it closed.

Step 2

Top trout with unsalted butter, capers, lemon juice & paprika. You can also place some of the butter on the inside of the fish. Pour 1/4 of white wine over each trout.

Step 3

Next, seal the aluminum foil shut and place the baking dish in preheated oven. Bake for 20 minutes.
